Pernand-Vergelesses often over-delivers on quality and value. This is especially true now that a new generation of young vignerons have taken over and made great advances in viticulture such as a more careful and rigorous selection of fruit. With ongoing investments and improvements of winemaking facilities, first class wines are to be discovered equal to those of the surrounding villages with better known names.

The Pavelot family is one name with a long history in this village dating back to the 17th century and record of ancestors making and selling wine goes back multiple generations. It is now brother/sister team of Luc and Lise Pavelot who manage the 9 hectare domaine. Both graduates of Beaune’s renowned winemaking school, and both having gained experience in regions outside of their home, Luc in northern California at Navarro Vineyards and Lise in the Loire Valley at Domaine Dagueneau, before both returning home and taking over from their father Régis Pavelot, in the early 1990s. The domaine has been certified organic since the 2009 vintage.

Rigourous work in the vineyards reducing yields and aerating the grape bunches makes a huge difference as this micro-climate, sandwiched between two imposing hills, can be cooler than the surrounding villages. They also practice a more thorough and demanding selection process at harvest so that only the cleanest and healthiest fruit goes into the fermenting tanks. With the exception of old-vine Aligoté, the Chardonnay juice is fermented in barrel and the Pinot generally has several days of cold maceration before fermentation begins, lasting 2 – 3 weeks, in enamel-lined concrete tanks, then being transferred to barrel for ageing anywhere from 12 to 15 months.
